We have a collection of operating systems made in Scratch, although they're not very advanced. But you might still like them!

CyanOS and CyanDOS were operating systems created with the goal of being simple and user-friendly. However, these systems were discontinued due to their messy code. You can access each of their versions here:
DeltaOS was the successor to CyanOS, containing a more customizable desktop environment called DCD (DeltaCompactDesktop), more optimized and organized code, a completely redesigned settings app with 4 categories and 13 options, while still maintaining compatibility with CyanOS, using the same window manager, XYZWin, thanks to this, the SDK was compatible with both CyanOS and DeltaOS.
